Almond Flour Shortbread Cookies (low carb)

These are great on their own, could be used as a base for a linzer type cookie, topped with strawberries and cream, you name it, these will fit the bill. Not too sweet, tender and luxorious as you would expect a shortbread cookie to be.



1 Cup good quality Almond Flour
1/4 Cup Softened Butter
1 1/2 TBS Organic Honey
1/4 tsp Vanilla Extract
Dash Sea  Salt

Heat oven to 350.   Mix all ingredients in a small bowl until dough  comes together.    Drop by teaspoons onto baking sheet. I flattened them out a bit and marked the tops with a fork making a cross hatch.  Bake 8-10 minutes or until golden brown.

Cool on rack.  Makes 8 cookies
