Cheesy Fried Ravioli

1 Cup Coconut Oil for frying

fillling:

  • 1 8 oz pkg marscapone or cream cheese softened
  • 1 egg
  • 1/2 c grated parmesan
  • 1/2 tsp fine sea salt
  • 1/2 tsp fresh ground pepper
  • 8 ounces thinly sliced prosciutto

Heat oil to 350

In a small bowl stir together all ingredients for the filling until well combined

Lay one slice of prosciuitto on a sheet of parchment paper so that the short end is toward you.  Lay another slice over the top of the so you make a greek cross with four arms to wrap around the filling.  Spoon about 1 heaping tablespoon of the filling into the center of the cross.  Fold one arm of the prosciutto over the filling.  Continue folding the arms around to make a square making sure the filling is covered well.  Repeat with the rest of the prosciutto.

working in batches, fry the ravioli in the hot oil for about 2 minutes or until crisp

Serve with a side salad with keto dressing for a perfect meal
