Homemade Vanilla Extract

Once I started making this I haven’t purchased vanilla extract from the store in over 4 years.  Super simple and inexpensive.  You need two ingredients:

1 cup unflavored vodka
3 whole vanilla beans, split with the “caviar” scraped out -don’t skimp here use good vanilla beans, my favorite is Madagascar vanilla beans I purchased online.

Place all ingredients including the bean and “caviar” in a mason jar or other glass container, shake well and put in a dark cool place such as your spice cabinet or pantry.  Shake every couple of days.  This will be ready to use in all of your recipes in approximately 3 weeks.  When you start to get low on the extract, simply add more vodka and another vanilla bean.  This becomes a never ending jar of vanilla extract.

Use this in baked goods, pancakes, french toast, waffles, etc.
