Peppermint Patties

So last year I decided to try making homemade peppermint patties.  They turned out amazing and I am getting ready to get in the kitchen and make another batch so figured I would post the recipe here for those of you that would like to give it a try.

Ingredients:

  • 2 1./4 cups powdered sugar
  • 2 TBS softened butter
  • 2 tsp peppermint extract
  • 1/4 tsp vanilla extract
  • 2 TBS cream
  • 1 1/2 cups good quality dark chocolate
  • 1 TBS vegetable shortening

Directions:

In a mixing bowl, combine first 5 ingredients and blend on low at first, otherwise you will have powdered sugar everywhere.   At first it will look dry and crumbly but it will come together.  Turn mixer up  to high and mix until the candy comes together and is creamy.  You will know its right when you touch it, it should be soft but not sticky.  If its sticky add a little more powdered sugar until the consistency is right.  When it is stiff like play doh its time to stop.

place the candy on saran wrap and roll into a log.  Wrap and place in refrigerator for about an hour until it is very firm.

Now its time to wrap these gems in luscious dark chocolate.  Let’s melt the chocoalte and vegetable shortening in the microwave.  Place both ingredients in a microwave safe bowl and heat on medium power in 30 second increments mixing in between until the mixture is smooth and glossy.

Now, using a fork, you don’t need a fancy dipping tool, a fork will do, dip each patty  in the melted chocolate until coated and place each disc on a tray coated in parchment paper.  Let the patties set at room temperature, here in Florida I have to place them in the refrigerator as room temp is usually pretty hot.

You have now successfully made homemade peppermint patties.  Enjoy!
