Pumpkin Pie Energy Bites – No Bake

Ok, so I LOVE to have something to snack on during the day  while working from home, I would much rather “graze” throughout the morning and afternoon rather than have a “meal”.
This is quick and easy, tasty and no-bake.  Makes 16 balls.
Pumpkin Pie Energy Bites (My Secret Recipe)- these make healthy snack and dessert. So popular with all of my friends and family!
  1. 1 cup pitted Medjool dates
  2. 1/2 cup pecans
  3. 1/3 cup pumpkin puree
  4. 1/4 cup unsweetened coconut flakes
  5. 2 tsp vanilla
  6. 1 tsp cinnamon
  7. 1/4 tsp nutmeg
  8. 1/4 tsp ground cloves
  9. Pinch of salt
  1. Place the dates into a small bowl and cover with water. Let soak for 10 minutes, then drain.
  2. Place the pecans into a food processor and pulse until finely ground. Add in the rest of the ingredients, including the soaked dates. Pulse until combined. Adjust the spices to taste. Place into the refrigerator for 30 minutes to chill.
  3. Use your hands to form the dough into small balls. Store in the refrigerator in an airtight container
