- 1 tsp unsalted butter softened
 - 1 large egg
 - 2 teaspoons coconut flour
 - pinch of baking soda
 - pinch of sea salt
 - 1 TBS grated parm – optional
 - 2 teaspooons coconut oil
 
- grease a 4 oz dessert ramekin with butter, preheat toaster oven to 400
 - mix egg and cocnut flour with fork until well combined then add remaining ingredients
 - place the dough in the ramekin.
 - bake for 12 minutes
 - allow to cool for 5 minutes then remove from ramekin and allow to cool completely
 - if you like your muffin with crispy edges, melt the coocnut oil in a pan over medium heat, when hot, place the muffin halves in the hot oil cut side down and fry until the edges are crispy
