Minute hollandaise

  • 1 stick unsalted butter
  • 2  large egg yolks
  • 2 teaspoons lemon juice
  • 1/8tsp cayenne pepper
  • 1/8tsp salt
  • pinch pepper

melt butter in microwave on high for 1 minute

place egg yolks and lemon juice in a heat safe bowl and whisk until smooth.  slowly whisk the hot butter into the yolks drop by drop until the mixture has thickened.

season with cayenne, salt and pepper .. store in frig for up to 5 days
