Minute English Muffin

  • 1 tsp unsalted butter softened
  • 1 large egg
  • 2 teaspoons coconut flour
  • pinch of baking soda
  • pinch of sea salt
  • 1 TBS grated parm – optional
  • 2 teaspooons coconut oil
  1. grease a 4 oz dessert ramekin with butter, preheat toaster oven to 400
  2. mix egg and cocnut flour with fork until well combined then add remaining ingredients
  3. place the dough in the ramekin.
  4. bake for 12 minutes
  5. allow to cool for 5 minutes then remove from ramekin and allow to cool completely
  6. if you like your muffin with crispy edges, melt the coocnut oil in a pan over medium heat, when hot, place the muffin halves in the hot oil cut side down and fry until the edges are crispy
